This is a delicious and easy recipe for granola! You can make it either AIP or paleo-friendly, depending on what your dietary needs are.
3 Tbs. palm shortening
2 Tbs. pure maple syrup
1 Tbs. coconut sugar
2 tsp. vanilla
2/3 c. arrowroot powder
1/3 c. tigernut flour
1/4 c. finely shredded unsweetened coconut
1/4 c. cashews, pecans, or other nuts (paleo version)
1 Tbs. gelatin
1/2 tsp. aluminum-free baking powder
1/2 tsp. salt
Preheat oven to 300 degrees F.
In a medium bowl, cream palm shortening, maple syrup, sugar, and vanilla. Stir in dry ingredients, breaking up any lumps in the tigernut flour. Dough will be crumbly.
Spread on a baking sheet lined with parchment paper, and bake for 15-20 minutes, depending on how browned you would like it.
Let cool on baking sheet, then serve with coconut or other nut milk, topped with fresh fruit.
NOTE: The great thing about granola is that it accommodates any number of additions, so you can add whatever suits your taste and diet. Nuts, dried fruit, even carob or chocolate chips – the possibilities are endless!
